  • 1 cup mushrooms (optional)
  • 2 cups low-sodium vegetable broth or chicken broth
  • 2 large eggs
  • 4 tablespoons melted butter (or olive oil)
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh sage, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Melt butter in a large skillet over medium heat. Add diced onions and celery; sauté until softened, about 5-7 minutes.
  3. If using, add mushrooms and sauté until golden brown.
  4. Crumble cornbread into a large mixing bowl. Pour the sautéed mixture over the cornbread and gently toss to combine.
  5. In another bowl, whisk together vegetable broth, beaten eggs, salt, and pepper. Slowly drizzle this mixture into the cornbread blend, tossing gently until everything is moistened.
  6. Fold in fresh herbs and transfer the mixture into a greased baking dish.
  7. Bake uncovered for 25-30 minutes until the top is golden brown and crispy.

Notes

For a vegan version, substitute eggs with flax eggs.
