Ingredients

- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 zucchinis, chopped
- 2 carrots, chopped
- 2 bell peppers, chopped
- 6 cups vegetable broth
- 2 cups tomatoes, diced
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- Optional: red pepper flakes, lemon juice, fresh parsley, fresh basil
Instructions
- Prepare your vegetables by washing and chopping them into evenly sized pieces.
- In a large pot, heat olive oil over medium heat. Add diced onions and sauté for about 5 minutes until translucent. Stir in minced garlic and cook for an additional minute.
- Add chopped zucchini, carrots, and bell peppers. Sauté for another 5-7 minutes to soften the vegetables.
- Pour in vegetable broth and bring to a gentle boil, scraping any bits off the bottom of the pot.
- Add diced tomatoes, salt, pepper, and oregano. Stir in red pepper flakes if desired. Lower heat to simmer, cover, and let cook for 20-25 minutes.
- Stir in chopped fresh herbs and a splash of lemon juice just before serving. Taste and adjust seasoning.
- Ladle soup into warm bowls. Drizzle with olive oil and sprinkle with extra herbs if desired. Serve hot with crusty bread or salad.
