- 1 package puff pastry, thawed
- 1 cup fresh cranberries (or dried cranberries)
- 2 cups mushrooms (button, cremini, or shiitake), sliced
- 2 tbsp fresh herbs (rosemary and thyme), chopped
- 2 cloves garlic, minced
- 1/2 cup cream cheese or ricotta
- 1 egg, for egg wash
- 1 tbsp water
- Salt and pepper, to taste
- Butter, for sautéing
Instructions
- In a skillet, sauté sliced mushrooms in butter over medium heat for 5-7 minutes until golden.
- Add minced garlic and sauté for another minute.
- Stir in cranberries and herbs and cook until cranberries soften.
- In a bowl, mix the mushroom mixture with cream cheese, seasoning with salt and pepper.
- Roll out the puff pastry and cut into 4-inch squares.
- Spoon filling into each square, fold corners to meet, and pinch to seal.
- Whisk together egg and water; brush over roll-ups.
- Bake at 400°F (200°C) for 20 minutes until golden brown.
- Cool slightly before serving.
Notes
These roll-ups can be made ahead; assemble just before baking for fresh, warm treats. You can substitute spinach for mushrooms for a different twist.
