- 2 cups fresh cranberries
- 1 cup cremini mushrooms, chopped
- 1 sweet onion, chopped
- 2 tablespoons fresh thyme or rosemary, chopped
- 3 tablespoons butter
- 1 package puff pastry
- Salt and pepper to taste
Instructions
- Prepare the filling: In a skillet over medium heat, melt 2 tablespoons of butter. Add chopped onions and sauté until translucent. Next, toss in the mushrooms and cook until they release their moisture and develop a light brown color. Finally, stir in the fresh cranberries, herbs, salt, and pepper. Let the mixture cook until the cranberries start to burst. Set aside to cool.
- Roll out the pastry: On a floured surface, roll out your puff pastry into a large rectangle, aiming for about ¼-inch thickness.
- Assemble the roll-ups: Spoon some of the mushroom-cranberry mixture onto the pastry, leaving space on the edges to seal. Roll the pastry tightly, forming a log. Cut into 1 to 2-inch pieces.
- Brush and bake: Preheat your oven to 400°F (200°C). Place the roll-ups on a prepared baking tray lined with parchment paper. Brush the tops with melted butter. Bake for 15-20 minutes, or until they are puffed and golden brown.
- Serve warm: Enjoy them fresh from the oven or at room temperature.
