- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup grated sharp cheddar or feta cheese
- 1 cup chopped olives (green, kalamata, or a mix)
- 2 tablespoons chopped fresh herbs (rosemary, thyme, or oregano)
- 1 egg
- 1 cup whole milk (or almond milk)
Instructions
- Preheat your oven to 375°F (190°C) and grease a loaf pan.
- In a large bowl, whisk together the flour, baking powder, and salt.
- Gently fold in the grated cheese and chopped olives.
- In a separate bowl, whisk together the egg and milk until well combined.
- Create a well in the center of the dry ingredients, then pour in the wet mixture; stir gently until just combined.
- Fold in the fresh herbs.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 40-45 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack. Slice and serve warm.
Notes
For a crustier exterior, place a small oven-safe dish filled with water in the oven while baking.
