  • 1 cup chopped olives (green, kalamata, or a mix)
  • 2 tablespoons chopped fresh herbs (rosemary, thyme, or oregano)
  • 1 egg
  • 1 cup whole milk (or almond milk)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Gently fold in the grated cheese and chopped olives.
  4. In a separate bowl, whisk together the egg and milk until well combined.
  5. Create a well in the center of the dry ingredients, then pour in the wet mixture; stir gently until just combined.
  6. Fold in the fresh herbs.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 40-45 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
