Ingredients

- 3 cups fresh corn kernels (or frozen corn)
- 1 cup shredded cheddar cheese
- 3 eggs
- 1 cup milk (or cream)
- 2 tablespoons butter
- 2 tablespoons fresh rosemary or thyme (chopped)
- 1 small onion (finely chopped)
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a medium-sized baking dish with butter or cooking spray.
- In a skillet, melt butter and sauté the chopped onion until soft, about 5 minutes.
- In a large bowl, mix the corn, sautéed onions, cheddar cheese, eggs, milk, herbs, and season with salt and pepper.
- Pour the mixture into the prepared baking dish. Optionally, sprinkle extra cheese on top.
- Bake for 30-40 minutes, or until puffed up and golden on top. A knife inserted should come out clean.
- Let sit for a few minutes before serving.
Notes
Consider adding cooked bacon or sautéed mushrooms for additional flavor. Experiment with different types of cheese for a unique twist.
