Ingredients

  • 1 cup shredded cheddar cheese
  • 3 eggs
  • 1 cup milk (or cream)
  • 2 tablespoons butter
  • 2 tablespoons fresh rosemary or thyme (chopped)
  • 1 small onion (finely chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a medium-sized baking dish with butter or cooking spray.
  3. In a skillet, melt butter and sauté the chopped onion until soft, about 5 minutes.
  4. In a large bowl, mix the corn, sautéed onions, cheddar cheese, eggs, milk, herbs, and season with salt and pepper.
  5. Pour the mixture into the prepared baking dish. Optionally, sprinkle extra cheese on top.
  6. Bake for 30-40 minutes, or until puffed up and golden on top. A knife inserted should come out clean.
