- 2 pounds beef chuck, cut into 1–2 inch pieces
- 2 cups apple cider
- 1 pound cremini or button mushrooms, sliced
- 1 large onion, chopped
- 4 cloves garlic, minced
- 4 medium carrots, sliced
- 2 medium potatoes, diced
- 2 sprigs fresh thyme
- 2 bay leaves
- 4 cups beef broth
- Salt and pepper, to taste
- 2 tablespoons cooking oil
Instructions
- Begin by cutting the beef chuck into bite-sized pieces, about one to two inches. Season with salt and pepper. Chop your vegetables and slice your mushrooms.
- In a large Dutch oven or heavy pot, heat oil over medium-high heat. Add half of the beef in a single layer and brown it on all sides. Remove and repeat with the remaining pieces.
- Add the onions and garlic to the pot, stirring until softened, about three to four minutes.
- Pour in the apple cider, scraping the bottom of the pot to deglaze.
- Return the beef to the pot along with the carrots, potatoes, mushrooms, thyme, bay leaves, and beef broth. Mix well.
- Bring the mixture to a gentle boil, then reduce heat to low and cover. Simmer for at least 90-120 minutes, or until the beef is tender.
- Before serving, taste the stew and adjust the seasoning as necessary.
- Ladle the stew into bowls and top with fresh parsley.
Notes
Use fresh herbs for better flavor, and feel free to experiment with different mushrooms. This stew can be cooked in a slow cooker on low for 6-8 hours.
