Ingredients

- 1 cup almond flour
- 1 1/2 cups confectioners’ sugar
- 3 egg whites
- 1/4 cup granulated sugar
- Red and green food coloring
- Pinch of salt
- 1/2 cup unsalted butter (room temperature)
- 1 1/2 cups powdered sugar
- 3 tablespoons heavy cream or milk
- Flavoring extract (peppermint or vanilla)
Instructions
- Preheat your oven to 300°F (150°C) and line baking sheets with parchment paper.
- In a mixing bowl, beat the egg whites until foamy, then gradually add granulated sugar while beating until glossy stiff peaks form. Add a pinch of salt and food coloring.
- Sift together almond flour and confectioners’ sugar, then fold this mixture into the meringue until smooth.
- Transfer the batter into a piping bag fitted with a round tip and pipe small circles onto the baking sheets. Let rest for 30 minutes.
- Bake for 15-18 minutes, then cool completely on the baking sheet.
- In another bowl, cream the butter until fluffy, then add powdered sugar and milk, mixing until smooth. Incorporate flavoring extract.
- Pair macaron shells and pipe buttercream onto one shell, sandwiching it with another.
- Optional: Decorate with edible dust or royal icing for a festive touch.
Notes
Let egg whites age at room temperature for better meringue texture. Sift dry ingredients multiple times for a smooth shell.
