Description

Delightful holiday macarons that resemble Santa’s belt, featuring a creamy buttercream filling and a nutty almond shell.


Ingredients

  • 1 cup almond flour
  • 1 1/2 cups confectioners’ sugar
  • 3 egg whites
  • 1/4 cup granulated sugar
  • Red and green food coloring
  • Pinch of salt
  • 1/2 cup unsalted butter (room temperature)
  • 1 1/2 cups powdered sugar
  • 3 tablespoons heavy cream or milk
  • Flavoring extract (peppermint or vanilla)

Instructions

  1. Preheat your oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, beat the egg whites until foamy, then gradually add granulated sugar while beating until glossy stiff peaks form. Add a pinch of salt and food coloring.
  3. Sift together almond flour and confectioners’ sugar, then fold this mixture into the meringue until smooth.
  4. Transfer the batter into a piping bag fitted with a round tip and pipe small circles onto the baking sheets. Let rest for 30 minutes.
  5. Bake for 15-18 minutes, then cool completely on the baking sheet.
  6. In another bowl, cream the butter until fluffy, then add powdered sugar and milk, mixing until smooth. Incorporate flavoring extract.
  7. Pair macaron shells and pipe buttercream onto one shell, sandwiching it with another.
  8. Optional: Decorate with edible dust or royal icing for a festive touch.

Notes

Let egg whites age at room temperature for better meringue texture. Sift dry ingredients multiple times for a smooth shell.
