Description

A delightful dessert with a buttery crust and a tangy filling, bringing joy and comfort to family gatherings.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 4 large eggs
  • 1 cup brown sugar
  • ¼ cup fresh lemon juice
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, mix the flour, granulated sugar, and softened butter until it resembles coarse crumbs. Press evenly into the bottom of the baking dish.
  3. Bake the crust for 15-20 minutes or until lightly golden.
  4. In another bowl, whisk together the eggs, brown sugar, lemon juice, lemon zest, and vanilla extract. Pour over the pre-baked crust.
  5. Bake for an additional 20-25 minutes, or until the filling is set but slightly jiggly.
  6. Let cool completely before slicing into squares. Dust with powdered sugar before serving.

Notes

Use brown butter for added flavor and avoid overbaking to keep the dessert moist.
