Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- In a bowl, mix the flour, granulated sugar, and softened butter until it resembles coarse crumbs. Press evenly into the bottom of the baking dish.
- Bake the crust for 15-20 minutes or until lightly golden.
- In another bowl, whisk together the eggs, brown sugar, lemon juice, lemon zest, and vanilla extract. Pour over the pre-baked crust.
- Bake for an additional 20-25 minutes, or until the filling is set but slightly jiggly.
- Let cool completely before slicing into squares. Dust with powdered sugar before serving.
