Ingredients

  • 1 lb fresh salmon, cut into chunks
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 potatoes, diced
  • 4 cups fish or vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh dill (or parsley/thyme)
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Dice your onions, mince your garlic, and chop your vegetables into uniform pieces.
  2. In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent, about 5 minutes. Add garlic and cook for an additional minute.
  3. Add carrots, celery, and potatoes to the pot, cooking for about 5 minutes.
  4. Slowly add the broth, stirring to combine. Allow it to come to a gentle simmer.
  5. Add the salmon chunks and let the soup cook for about 10 minutes until the salmon is cooked through.
  6. Stir in the cream and fresh herbs, season with salt, pepper, and lemon juice before serving.
  7. Ladle into bowls, garnish with herbs, and serve with crusty bread.

Notes

Feel free to substitute salmon for shrimp or other hearty white fish as desired.
