Ingredients

- 1 lb fresh salmon, cut into chunks
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 potatoes, diced
- 4 cups fish or vegetable broth
- 1/2 cup heavy cream
- 1/4 cup fresh dill (or parsley/thyme)
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- Dice your onions, mince your garlic, and chop your vegetables into uniform pieces.
- In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent, about 5 minutes. Add garlic and cook for an additional minute.
- Add carrots, celery, and potatoes to the pot, cooking for about 5 minutes.
- Slowly add the broth, stirring to combine. Allow it to come to a gentle simmer.
- Add the salmon chunks and let the soup cook for about 10 minutes until the salmon is cooked through.
- Stir in the cream and fresh herbs, season with salt, pepper, and lemon juice before serving.
- Ladle into bowls, garnish with herbs, and serve with crusty bread.
Notes
Feel free to substitute salmon for shrimp or other hearty white fish as desired.
