Ingredients

  • 4 salmon fillets
  • 2 oranges, thinly sliced
  • 1 lemon, thinly sliced
  • 1 lime, thinly sliced
  • 4 tablespoons unsalted butter
  • Fresh dill or parsley
  • Salt and pepper, to taste
  • Optional: asparagus or bell peppers for added texture

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut large rectangles of parchment paper, enough to fold over the salmon fillets.
  3. Position the salmon fillet in the center of the parchment and season with salt and pepper.
  4. Top with a pat of butter and slices of citrus fruits, adding fresh herbs.
  5. Fold the parchment tightly to create a sealed packet.
  6. Place the packets on a baking sheet and bake for 15-20 minutes.
  7. Carefully open the packets and serve the salmon in parchment.

Notes

Adjust cooking time based on the thickness of the salmon. It’s better to slightly undercook, as residual heat will finish the cooking.
