Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Place the lamb shoulder in a large roasting pan and rub it generously with salt and pepper.
  3. In a bowl, combine honey, minced garlic, balsamic vinegar, and finely chopped fresh rosemary.
  4. Brush the glaze all over the lamb shoulder, ensuring every crevice is coated.
  5. Cover the pan with foil and roast in the preheated oven for about 3 hours.
  6. Remove the foil for the last 30 minutes to allow the outside to brown and caramelize.
  7. Once fork-tender, remove from the oven and let it rest for 15 minutes before slicing.
