Instructions
- Preheat the oven to 325°F (163°C).
- Place the lamb shoulder in a large roasting pan and rub it generously with salt and pepper.
- In a bowl, combine honey, minced garlic, balsamic vinegar, and finely chopped fresh rosemary.
- Brush the glaze all over the lamb shoulder, ensuring every crevice is coated.
- Cover the pan with foil and roast in the preheated oven for about 3 hours.
- Remove the foil for the last 30 minutes to allow the outside to brown and caramelize.
- Once fork-tender, remove from the oven and let it rest for 15 minutes before slicing.
- Serve with roasted vegetables or creamy mashed potatoes to catch the delicious glaze.
