- 2 roasted red peppers
- 2 fresh tomatoes
- 3 cloves of garlic
- 1/2 cup nuts (almonds or hazelnuts)
- 1/4 cup extra virgin olive oil
- 1 tbsp red wine vinegar
- 1 tsp smoked paprika
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C). Spread your tomatoes and peppers on a baking sheet lined with parchment paper, drizzling them lightly with olive oil. Roast for about 25-30 minutes until soft and slightly charred.
- While vegetables roast, place your nuts in a dry skillet over medium heat. Toast for about 5-7 minutes until golden and fragrant.
- Once veggies have cooled, blend them with the nuts, peeled garlic, olive oil, vinegar, and smoked paprika until smooth. Adjust texture with more olive oil or water if desired.
- Taste and adjust seasoning with salt or extra vinegar as needed.
