Description

A rich, earthy sauce from Catalonia, Spain, made with roasted red peppers, tomatoes, nuts, and garlic, perfect for enhancing a variety of dishes.


Ingredients

  • 2 roasted red peppers
  • 2 fresh tomatoes
  • 3 cloves of garlic
  • 1/2 cup nuts (almonds or hazelnuts)
  • 1/4 cup extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp smoked paprika
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Spread your tomatoes and peppers on a baking sheet lined with parchment paper, drizzling them lightly with olive oil. Roast for about 25-30 minutes until soft and slightly charred.
  2. While vegetables roast, place your nuts in a dry skillet over medium heat. Toast for about 5-7 minutes until golden and fragrant.
  3. Once veggies have cooled, blend them with the nuts, peeled garlic, olive oil, vinegar, and smoked paprika until smooth. Adjust texture with more olive oil or water if desired.
  4. Taste and adjust seasoning with salt or extra vinegar as needed.
