- 2 lbs fresh tomatoes (Roma or heirloom)
- 2 tbsp olive oil
- 6 cloves garlic
- 1 large sweet onion
- 4 cups vegetable broth
- 1 tbsp fresh basil (or thyme, or oregano)
- 1/2 cup cream or coconut milk (optional)
- Salt and pepper to taste
- Squeeze of fresh lemon juice (optional)
Instructions
- Preheat oven to 400°F (200°C). Wash and core tomatoes, cutting them into halves or quarters. Peel and crush garlic cloves and chop onion.
- On a baking sheet, spread cut tomatoes, garlic, and onion. Drizzle with olive oil and season with salt and pepper. Roast for 30-35 minutes until blistered and fragrant.
- Transfer roasted mixture to a large pot, adding vegetable broth and herbs. Simmer for 10 minutes. Blend with an immersion blender for a silky texture.
- Stir in cream or coconut milk if desired, and adjust seasoning with salt and pepper. Add a squeeze of fresh lemon juice for brightness.
- Ladle the soup into bowls and garnish with fresh basil and a drizzle of olive oil. Serve with crusty bread or grilled cheese sandwich.
Notes
Avoid overcrowding the baking sheet when roasting to ensure proper caramelization. Use high-quality olive oil for the best flavor.
