  • 6 cloves garlic
  • 1 large sweet onion
  • 4 cups vegetable broth

  • 1/2 cup cream or coconut milk (optional)
  • Salt and pepper to taste
  • Squeeze of fresh lemon juice (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Wash and core tomatoes, cutting them into halves or quarters. Peel and crush garlic cloves and chop onion.
  2. On a baking sheet, spread cut tomatoes, garlic, and onion. Drizzle with olive oil and season with salt and pepper. Roast for 30-35 minutes until blistered and fragrant.
  3. Transfer roasted mixture to a large pot, adding vegetable broth and herbs. Simmer for 10 minutes. Blend with an immersion blender for a silky texture.
  4. Stir in cream or coconut milk if desired, and adjust seasoning with salt and pepper. Add a squeeze of fresh lemon juice for brightness.
  5. Ladle the soup into bowls and garnish with fresh basil and a drizzle of olive oil. Serve with crusty bread or grilled cheese sandwich.
