Description

A vibrant and tangy salsa made with roasted tomatillos, garlic, and fresh ingredients, perfect for dipping or topping dishes.


Ingredients

  • 1 pound tomatillos, husked and rinsed
  • 4 cloves garlic, unpeeled
  • 1 medium onion, cut into wedges
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 12 fresh jalapeños or serrano peppers, chopped
  • Salt, to taste
  • Olive oil, for roasting

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Remove the husks from the tomatillos and rinse them under cool water.
  3. Place tomatillos, garlic cloves, and onion wedges on a baking sheet. Drizzle with olive oil and sprinkle with salt.
  4. Roast for 20-25 minutes until the edges are golden brown and caramelized.
  5. Allow to cool slightly before removing the skins from the garlic.
  6. Add roasted tomatillos, garlic, onion, cilantro, lime juice, and fresh chilies to a blender or food processor. Pulse until desired consistency is reached.
  7. Taste and adjust with more lime juice or salt if needed.
  8. Serve immediately or chill for a couple of hours to let the flavors meld.

Notes

Fresh tomatillos are key. If unavailable, green tomatoes can be used as a substitute.
