A vibrant and tangy salsa made with roasted tomatillos, garlic, and fresh ingredients, perfect for dipping or topping dishes.
Ingredients

- 1 pound tomatillos, husked and rinsed
- 4 cloves garlic, unpeeled
- 1 medium onion, cut into wedges
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1–2 fresh jalapeños or serrano peppers, chopped
- Salt, to taste
- Olive oil, for roasting
Instructions
- Preheat your oven to 425°F (220°C).
- Remove the husks from the tomatillos and rinse them under cool water.
- Place tomatillos, garlic cloves, and onion wedges on a baking sheet. Drizzle with olive oil and sprinkle with salt.
- Roast for 20-25 minutes until the edges are golden brown and caramelized.
- Allow to cool slightly before removing the skins from the garlic.
- Add roasted tomatillos, garlic, onion, cilantro, lime juice, and fresh chilies to a blender or food processor. Pulse until desired consistency is reached.
- Taste and adjust with more lime juice or salt if needed.
- Serve immediately or chill for a couple of hours to let the flavors meld.
Notes
Fresh tomatillos are key. If unavailable, green tomatoes can be used as a substitute.
