  • Cherry tomatoes (optional)

Instructions

  1. Cook the tortellini in boiling salted water according to package instructions until al dente (3-5 minutes for fresh).
  2. Drain and set aside.
  3. If using jarred roasted peppers, drain and chop them. For homemade, roast sliced fresh bell peppers at 400°F (200°C) for 25-30 minutes until tender and charred.
