Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the sweet potatoes. Cut them into bite-sized cubes.
- In a large mixing bowl, toss the sweet potatoes with olive oil, maple syrup, salt, and pepper.
- Spread the sweet potatoes on a baking sheet in a single layer.
- Roast for about 25-30 minutes, flipping halfway through.
- During the last 5-10 minutes of roasting, scatter the walnuts over the sweet potatoes.
