- 1 butternut squash, peeled, seeded and cubed
- 1 whole head of garlic
- 2 tablespoons unsalted butter
- 1/4 cup heavy cream (or non-dairy alternative)
- Salt, to taste
- Pepper, to taste
- Nutmeg or cinnamon (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Peel the butternut squash, slice it in half, and remove the seeds.
- Cut into cubes, keeping them roughly the same size for even cooking.
- Slice the top off a whole head of garlic, drizzle with olive oil, wrap in foil, and place in the oven.
- Toss the squash cubes with a drizzle of oil, salt, and pepper. Spread on a baking sheet.
- Roast for 25-30 minutes until tender and caramelized.
- Let the squash and garlic cool slightly, then squeeze the roasted garlic into a mixing bowl.
- Mash the squash with the garlic until creamy.
- Add the butter and cream, stirring to achieve desired consistency.
- Serve in a dish and garnish with fresh herbs or extra butter.
Notes
For a lighter option, substitute olive oil for butter. You can use any milk as an alternative to cream.
