- 1 medium butternut squash, peeled and cubed
- 1 lb ground turkey
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp fresh thyme
- 1 tsp fresh rosemary
- Salt to taste
- Pepper to taste
- Pinch of chili flakes (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the butternut squash into one-inch pieces.
- Toss the squash with olive oil, salt, pepper, thyme, and rosemary in a large bowl.
- Spread the squash evenly on a baking sheet and roast for about 25-30 minutes, flipping halfway through.
- While the squash roasts, heat a skillet over medium heat, add olive oil, and sauté the diced onion until softened.
- Add the ground turkey to the skillet, breaking it apart as it cooks. Add the garlic, salt, pepper, and chili flakes, cooking until the turkey is fully cooked.
- Once the squash is roasted, combine it with the turkey in the skillet and stir together to meld flavors over low heat.
- Serve with optional freshly chopped parsley or a squeeze of lemon.

Serve the dish over quinoa or brown rice for a hearty meal. Consider topping with feta cheese or pumpkin seeds.
