  • 1 lb ground turkey
  • 2 tbsp olive oil

  • Salt to taste
  • Pepper to taste
  • Pinch of chili flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the butternut squash into one-inch pieces.
  3. Toss the squash with olive oil, salt, pepper, thyme, and rosemary in a large bowl.
  4. Spread the squash evenly on a baking sheet and roast for about 25-30 minutes, flipping halfway through.
  5. While the squash roasts, heat a skillet over medium heat, add olive oil, and sauté the diced onion until softened.
  6. Add the ground turkey to the skillet, breaking it apart as it cooks. Add the garlic, salt, pepper, and chili flakes, cooking until the turkey is fully cooked.
  7. Once the squash is roasted, combine it with the turkey in the skillet and stir together to meld flavors over low heat.
  8. Serve with optional freshly chopped parsley or a squeeze of lemon.
