- 1 pound ground turkey
- 2 cloves garlic, minced

Instructions
- Preheat your oven to 425°F (220°C).
- Prepare the butternut squash: Cut it in half lengthwise, scoop out the seeds, peel, and cube the flesh.
- Chop the onion and garlic.
- Sauté the ground turkey: In a large skillet, heat olive oil and sauté the onion until translucent. Add minced garlic, then the ground turkey, and cook until browned.
- Combine ingredients: In a large bowl, mix the roasted butternut squash, turkey mixture, and seasonings.
- Spread the mixture on a lined baking sheet and roast for about 25-30 minutes until tender and caramelized, stirring halfway through.
- Let it rest before serving, garnished with fresh herbs.
Notes
Cut the squash into uniform pieces for even cooking. Don’t overcrowd the baking sheet for best caramelization.
