Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the butternut squash: Cut it in half lengthwise, scoop out the seeds, peel, and cube the flesh.
  3. Chop the onion and garlic.
  4. Sauté the ground turkey: In a large skillet, heat olive oil and sauté the onion until translucent. Add minced garlic, then the ground turkey, and cook until browned.
  5. Combine ingredients: In a large bowl, mix the roasted butternut squash, turkey mixture, and seasonings.
  6. Spread the mixture on a lined baking sheet and roast for about 25-30 minutes until tender and caramelized, stirring halfway through.
