  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh sage, chopped
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (163°C) and allow the turkey to reach room temperature.
  2. In a bowl, mix the softened butter, minced garlic, chopped herbs, salt, and pepper to create an herb butter mixture.
  3. Pat the turkey breasts dry and loosen the skin. Rub the herb butter mixture onto the meat and under the skin.
  4. Truss the legs with kitchen twine and tuck the wings under the breast.
  5. Place the turkey breast on a roasting rack and roast for 1.5 to 2 hours, basting every 30 minutes.
  6. Once done, let the turkey rest for at least 15 minutes before carving.
  7. Serve with your favorite sides and drizzle with gravy from the drippings.
