Description

A comforting pot pie filled with roasted broccoli, creamy cheddar cheese, and tender chicken, all wrapped in a golden, flaky crust.


Ingredients

  • 2 cups cooked chicken (breast or thighs), diced
  • 2 cups fresh broccoli florets, roasted
  • 1 cup sharp cheddar cheese, shredded
  • 1 pre-made pie crust
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • Fresh herbs (thyme, rosemary, parsley), to taste
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, sauté garlic in a touch of olive oil until fragrant (about 1 minute).
  3. Add the roasted broccoli and a splash of chicken broth. Cook until tender, about 5 minutes.
  4. Remove the broccoli and set aside. In the same skillet, add diced chicken. Season with salt, pepper, and fresh herbs. Cook until browned, about 8-10 minutes.
  5. Lower the heat, return the broccoli to the pan, and pour in the cream and chicken broth. Stir until combined, then mix in the cheddar cheese until melted.
  6. Pour the filling into a pie dish and cover with the pie crust. Cut slits in the top to allow steam to escape.
  7. Bake for 30 minutes or until the crust is golden brown and filling is bubbling.
  8. Let sit for 10 minutes before serving warm.

Notes

For a vegetarian version, substitute chicken with mushrooms or chickpeas.
