Description
A comforting pot pie filled with roasted broccoli, creamy cheddar cheese, and tender chicken, all wrapped in a golden, flaky crust.
Ingredients

- 2 cups cooked chicken (breast or thighs), diced
- 2 cups fresh broccoli florets, roasted
- 1 cup sharp cheddar cheese, shredded
- 1 pre-made pie crust
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- Fresh herbs (thyme, rosemary, parsley), to taste
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet over medium heat, sauté garlic in a touch of olive oil until fragrant (about 1 minute).
- Add the roasted broccoli and a splash of chicken broth. Cook until tender, about 5 minutes.
- Remove the broccoli and set aside. In the same skillet, add diced chicken. Season with salt, pepper, and fresh herbs. Cook until browned, about 8-10 minutes.
- Lower the heat, return the broccoli to the pan, and pour in the cream and chicken broth. Stir until combined, then mix in the cheddar cheese until melted.
- Pour the filling into a pie dish and cover with the pie crust. Cut slits in the top to allow steam to escape.
- Bake for 30 minutes or until the crust is golden brown and filling is bubbling.
- Let sit for 10 minutes before serving warm.
Notes
For a vegetarian version, substitute chicken with mushrooms or chickpeas.
