- 4 cups cooked, shredded chicken (breast or thighs)
- 2 cups long-grain white rice
- 1 can cream of chicken soup
- 1 cup whole milk
- 1 cup crushed Ritz crackers
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Optional: sautéed mushrooms, green beans, herbs (thyme or parsley)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken, cooked rice, cream of chicken soup, and milk. Stir in your seasonings and any optional vegetables.
- Pour the mixture into a greased 9×13-inch casserole dish, spreading it evenly.
- Crush the Ritz crackers and sprinkle them generously over the top.
- Bake uncovered for about 30-40 minutes, or until bubbly and golden brown.
- Let it sit for about 10 minutes before serving.
Notes
For a vegetarian version, substitute chicken with sautéed vegetables and use vegetable or mushroom soup.
