- 4 ripe bananas
- 1 box vanilla wafers
- 4 cups whole or 2% milk
- 1 cup sugar
- 1/3 cup cornstarch
- 2 large eggs
- 1 teaspoon vanilla extract
- Whipped cream for garnish
Instructions
- Prep your bananas by peeling and slicing them. Drizzle with lemon juice to prevent browning.
- In a medium saucepan, whisk together milk, sugar, and cornstarch. Heat over medium, stirring until thickened (about 5-7 minutes).
- Whisk two egg yolks in a small bowl. Temper with hot milk, then return to saucepan and cook until thickened (about 2 minutes).
- Remove from heat and stir in vanilla extract.
- In a trifle dish or cups, layer vanilla wafers, banana slices, and custard, repeating layers. Top with whipped cream.
- Chill in the refrigerator for 3-4 hours and serve cold.
Notes
For a dairy-free version, substitute almond or coconut milk and use vegan whipped cream. Gluten-free cookies can also be used.
