  • 1 cup sugar
  • 1/3 cup cornstarch
  • 2 large eggs

Instructions

  1. Prep your bananas by peeling and slicing them. Drizzle with lemon juice to prevent browning.
  2. In a medium saucepan, whisk together milk, sugar, and cornstarch. Heat over medium, stirring until thickened (about 5-7 minutes).
  3. Whisk two egg yolks in a small bowl. Temper with hot milk, then return to saucepan and cook until thickened (about 2 minutes).
  4. Remove from heat and stir in vanilla extract.
