Description
Crispy on the outside and creamy on the inside, these Reuben Balls are a delightful twist on a classic sandwich, served with a spicy Thousand Island dressing.

- 2 cups cooked corned beef, finely chopped
- 1 cup Swiss cheese, shredded
- 1 cup sauerkraut, drained
- 1 cup breadcrumbs (fresh or panko)
- 1 large egg
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp ground mustard
- Oil for frying
Instructions
- In a bowl, combine corned beef, Swiss cheese, sauerkraut, breadcrumbs, egg, and spices until thoroughly mixed.
- Take a portion of the mixture and mold it into a ball size of a golf ball.
- Place the formed balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes.
- Heat oil in a deep skillet until shimmering. Drop each ball into the oil and fry until golden brown, about 3-4 minutes.
- Transfer the cooked balls to a plate lined with paper towels to drain excess oil.
- For the Spicy Thousand Island dressing, mix mayonnaise, ketchup, hot sauce, and relish until creamy and spicy.
Notes
Test the oil temperature by placing a small piece of bread—if it bubbles and sizzles, it’s ready. Avoid overpacking the filling to maintain the desired texture.
