- 2 cups all-purpose flour
- 1 tablespoon cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup granulated sugar
- ½ cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 2 tablespoons red food coloring
- 8 ounces cream cheese
- ½ cup powdered sugar
- 2 tablespoons softened butter
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a mixing bowl, whisk together the flour, cocoa powder, baking soda, and baking powder. Set aside.
- In a large bowl, beat together the granulated sugar and vegetable oil until well combined. Stir in the egg and vanilla extract.
- Slowly mix in the dry ingredients, alternating with the buttermilk. Add the red food coloring and blend until smooth.
- Using a cookie scoop, drop the batter onto prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes until a toothpick comes out clean. Allow to cool on the sheets for a few minutes before transferring to a wire rack.
- For the filling, whip together cream cheese, powdered sugar, and softened butter until creamy.
- Once the whoopie pies have cooled completely, spread a generous dollop of filling between two cookies and gently press them together.
- Optionally, roll the edges in sprinkles or cocoa powder before serving.
Notes
Allow cream cheese to soften for a smooth filling. Don’t rush the cooling process for best results.
