Description

Deliciously soft red velvet cookies filled with a tangy cream cheese filling, perfect for any celebration.


Ingredients

  • 1 tablespoon cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 tablespoons red food coloring
  • 8 ounces cream cheese
  • ½ cup powdered sugar
  • 2 tablespoons softened butter

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, whisk together the flour, cocoa powder, baking soda, and baking powder. Set aside.
  3. In a large bowl, beat together the granulated sugar and vegetable oil until well combined. Stir in the egg and vanilla extract.
  4. Slowly mix in the dry ingredients, alternating with the buttermilk. Add the red food coloring and blend until smooth.
  5. Using a cookie scoop, drop the batter onto prepared baking sheets, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes until a toothpick comes out clean. Allow to cool on the sheets for a few minutes before transferring to a wire rack.
  7. For the filling, whip together cream cheese, powdered sugar, and softened butter until creamy.
  8. Once the whoopie pies have cooled completely, spread a generous dollop of filling between two cookies and gently press them together.
  9. Optionally, roll the edges in sprinkles or cocoa powder before serving.

Notes

Allow cream cheese to soften for a smooth filling. Don’t rush the cooling process for best results.
