Instructions

  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat together sugar, eggs, oil, buttermilk, and food coloring until smooth.
  4. Gradually mix dry ingredients into wet ingredients until just combined.
  5. Fill muffin cups about two-thirds full with batter.
  6. In a separate bowl, mix cream cheese and sugar until smooth, then dollop on top of the batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool in the pan for a few minutes before transferring to a wire rack.
