Instructions
- Preheat the Oven to 350°F (175°C) and prepare a muffin tin with liners.
- In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, beat together sugar, eggs, oil, buttermilk, and food coloring until smooth.
- Gradually mix dry ingredients into wet ingredients until just combined.
- Fill muffin cups about two-thirds full with batter.
- In a separate bowl, mix cream cheese and sugar until smooth, then dollop on top of the batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool in the pan for a few minutes before transferring to a wire rack.
