  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Add melted butter and mix well, then stir in the sugars, eggs, and vanilla until fully combined.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, and cinnamon.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Pour the batter into a greased loaf pan and tap gently to release air bubbles.
  7. Bake for 60-70 minutes or until a toothpick comes out clean; check around 55 minutes.
  8. Cool in the pan for 15 minutes before transferring to a wire rack.
  9. For frosting, beat cream cheese and powdered sugar until creamy, then add vanilla. Spread over the cooled banana bread.

Notes

Using very ripe bananas will yield the best flavor and moisture. The frosting can also be adjusted according to preference.
