Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the butter and sugar together in a large bowl until light and fluffy.
- Add the egg and vanilla extract, and mix until just combined.
- Incorporate the all-purpose flour and salt, mixing until a soft dough forms.
- Prepare the raspberry swirl by gently crushing fresh raspberries with a fork, or use raspberry sauce.
- Create a tablespoon of dough, flatten it, and add a spoonful of raspberry, then fold to create a swirl.
- Shape cookies and place them on the baking sheet, spaced about 2 inches apart.
- Bake for 10-12 minutes until edges are golden and centers are soft.
- Cool on the baking sheet for a few minutes, then dust with powdered sugar.
- Serve cookies fresh, at room temperature, or cold.
Notes
