Description

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 large egg
  • 1 cup ground almonds
  • 2 cups all-purpose flour
  • 1/2 cup raspberry jam
  • Powdered sugar for dusting

Instructions

  1. Prepare the dough by creaming the butter and powdered sugar until light and fluffy. Add the egg, then mix in the ground almonds and flour until combined.
  2. Chill the dough wrapped in plastic wrap for at least 60 minutes in the refrigerator.
  3. Roll out the dough on a floured surface to about 1/4-inch thickness, and cut into shapes.
  4. Preheat your oven to 350°F (175°C) and bake the cookies for 12-15 minutes until lightly golden.
  5. Assemble cooled cookies by spreading raspberry jam on whole cookies and placing cut-out cookies on top.
  6. Dust with powdered sugar before serving.

Notes

For an elegant touch, serve with tea or coffee. These cookies can also be frozen without jam, storing for up to three months.
