- 1 cup powdered sugar
- 1 large egg
- 1 cup ground almonds
- 2 cups all-purpose flour
- 1/2 cup raspberry jam
- Powdered sugar for dusting
Instructions
- Prepare the dough by creaming the butter and powdered sugar until light and fluffy. Add the egg, then mix in the ground almonds and flour until combined.
- Chill the dough wrapped in plastic wrap for at least 60 minutes in the refrigerator.
- Roll out the dough on a floured surface to about 1/4-inch thickness, and cut into shapes.
- Preheat your oven to 350°F (175°C) and bake the cookies for 12-15 minutes until lightly golden.
- Assemble cooled cookies by spreading raspberry jam on whole cookies and placing cut-out cookies on top.
- Dust with powdered sugar before serving.
Notes
For an elegant touch, serve with tea or coffee. These cookies can also be frozen without jam, storing for up to three months.
