Ingredients

  • 1 cup almond flour
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, room temperature
  • 1 cup powdered sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 cup raspberry jam

Instructions

  1. Mix the butter and powdered sugar until light and fluffy in a mixing bowl. Add the egg, vanilla, and almond extract, mixing well. Gradually incorporate the almond flour and all-purpose flour until you have a soft dough.
  2. Chill the dough in the fridge for at least 30 minutes to help maintain the cookie shape.
  3. Preheat your oven to 350°F (175°C). Scoop out small portions of dough (about 1 tablespoon each) and roll them into balls. Make a small indentation in the center with your thumb.
  4. Fill the indentation with about half a teaspoon of raspberry jam. Carefully pinch the edges to enclose the jam and roll back into a ball shape.
  5. Bake on a parchment-lined baking sheet for 15-18 minutes until lightly golden.
  6. Dust with powdered sugar after cooling slightly, then transfer to a wire rack to cool completely.

Notes

Always use room temperature butter for a better texture. Don’t skip the chilling period to maintain shape during baking.
