- 1 block firm or extra-firm tofu
- 3 tablespoons nutritional yeast
- 1 bell pepper, diced
- 1 small onion, diced
- 1/2 cup mushrooms, sliced

- 1/2 teaspoon black salt
- 1 tablespoon olive oil or vegan butter
Instructions
- Press the tofu to remove excess moisture and dice your vegetables.
- Sauté the onions and bell peppers in a skillet with olive oil until softened, about 5 minutes.
- Add the mushrooms and cook until tender.
- Crush the pressed tofu in a bowl until resembling scrambled eggs.
- Mix in nutritional yeast, turmeric, black salt, and any fresh herbs.
- Combine the sautéed vegetables with the tofu mixture until well incorporated.
- Cook the omelette in the skillet for 5-7 minutes on one side, then flip and cook for another 5 minutes until golden.
- Serve hot, garnished with fresh herbs or avocado slices.
