  • 1/2 cup dry white wine (optional)
  • 2 tbsp unsalted butter
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Prepare shrimp: Pat dry and season with salt and pepper.
  2. Sauté aromatics: Heat butter, add garlic, and cook until fragrant.
  3. Cook shrimp: Add shrimp to skillet, cooking until pink and opaque, then remove.
  4. Toast rice: Add more butter if necessary and toss in Arborio rice, stirring until lightly toasted.
  5. Deglaze: Pour in white wine, stirring until mostly absorbed.
  6. Add broth: Gradually add warm broth, stirring continuously until absorbed, about 18-20 minutes.
  7. Finish the dish: Stir in cooked shrimp, lemon juice, zest, herbs, and season to taste.
  8. Serve: Spoon risotto into bowls and garnish with herbs and optional olive oil or butter.

Notes

For added richness, serve with freshly grated parmesan or creamy burrata. Pairs well with a light salad or steamed vegetables.
