Description

Delicious Pumpkin Scones topped with a sweet maple glaze, perfect for autumn gatherings and family breakfasts.

Ingredients

Scale
  • 1 cup pumpkin purée
  • 2 cups all-purpose flour (or whole wheat flour)
  • 1/4 cup granulated sugar
  • 2 tablespoons brown sugar (or coconut sugar)
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, cubed (or coconut oil)
  • 2 large eggs (or flax egg for vegan)
  • 1/4 cup maple syrup (for scones and glaze)
  • 1 cup powdered sugar (for glaze)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, whisk together flour, baking powder, spices, sugar, and salt.
  3. Add cold butter and work into the flour mixture until it resembles coarse crumbs.
  4. Create a well in the center and add pumpkin purée and beaten eggs; mix gently until combined.
  5. Turn dough onto a floured surface, pat into a circle about 1-inch thick, and cut into triangles or rounds.
  6. Place scones on a parchment-lined baking sheet and bake for 15-20 minutes until golden.
  7. While cooling, whisk powdered sugar with maple syrup for the glaze.
  8. Drizzle glaze over cooled scones and serve warm.

Notes

For a lighter texture, avoid overmixing the dough and use cold ingredients. For a dairy-free option, substitute coconut oil for butter.
