  • 1 cup Toasted Pecans, chopped
  • 1 cup Brown Sugar
  • 1/2 cup Unsalted Butter, melted
  • 2 large Eggs
  • 1/2 cup Milk
  • 1 cup All-Purpose Flour
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1 tsp Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish with butter or non-stick spray.
  3. In a large mixing bowl, combine pumpkin puree, eggs, milk, melted butter, and vanilla extract. Whisk until smooth and creamy.
  4. In another bowl, mix flour, brown sugar, spices, and a pinch of salt. Whisk to combine.
  5. Gradually add the dry mixture to the wet ingredients, folding gently until just combined.
  6. Gently fold in the toasted pecans, reserving a handful for topping.
  7. Spread the mixture evenly into the prepared baking dish, smoothing the top and sprinkling reserved pecans on top.
  8. Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  9. Allow the cobbler to cool for a few minutes before serving.
