- 2 cups Pumpkin Puree
- 1 cup Toasted Pecans, chopped
- 1 cup Brown Sugar
- 1/2 cup Unsalted Butter, melted
- 2 large Eggs
- 1/2 cup Milk
- 1 cup All-Purpose Flour
- 1 tsp Cinnamon
- 1/2 tsp Nutmeg
- 1 tsp Vanilla Extract
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch baking dish with butter or non-stick spray.
- In a large mixing bowl, combine pumpkin puree, eggs, milk, melted butter, and vanilla extract. Whisk until smooth and creamy.
- In another bowl, mix flour, brown sugar, spices, and a pinch of salt. Whisk to combine.
- Gradually add the dry mixture to the wet ingredients, folding gently until just combined.
- Gently fold in the toasted pecans, reserving a handful for topping.
- Spread the mixture evenly into the prepared baking dish, smoothing the top and sprinkling reserved pecans on top.
- Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Allow the cobbler to cool for a few minutes before serving.
