Ingredients

  • 1/4 cup melted butter
  • 1/4 cup brown sugar
  • 1 cup pureed pumpkin
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/4 cup heavy cream
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine rolled oats, melted butter, and brown sugar. Press into a tart pan and bake for about 10 minutes or until lightly golden.
  2. While the crust bakes, whisk together pumpkin puree, brown sugar, eggs, heavy cream, cinnamon, nutmeg, and ginger until smooth.
  3. Once the crust is ready, pour the pumpkin mixture into the crust. Bake for another 30-35 minutes, or until the filling is set.
  4. Let the tart cool for at least 15 minutes before slicing and serving with whipped cream or a sprinkle of cinnamon.

Notes

For a vegan option, substitute eggs with flaxseed meal mixed with water and heavy cream with coconut cream. Serve warm or chilled.
