- 1 cup rolled oats
- 1/4 cup melted butter
- 1/4 cup brown sugar
- 1 cup pureed pumpkin
- 1/2 cup brown sugar
- 2 eggs
- 1/4 cup heavy cream
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine rolled oats, melted butter, and brown sugar. Press into a tart pan and bake for about 10 minutes or until lightly golden.
- While the crust bakes, whisk together pumpkin puree, brown sugar, eggs, heavy cream, cinnamon, nutmeg, and ginger until smooth.
- Once the crust is ready, pour the pumpkin mixture into the crust. Bake for another 30-35 minutes, or until the filling is set.
- Let the tart cool for at least 15 minutes before slicing and serving with whipped cream or a sprinkle of cinnamon.
Notes
For a vegan option, substitute eggs with flaxseed meal mixed with water and heavy cream with coconut cream. Serve warm or chilled.
