Ingredients

- 1 cup canned pumpkin puree
- 1 cup heavy whipping cream
- 1/2 cup granulated sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger (optional)
- 1 teaspoon vanilla extract
- 1 tablespoon gelatin (or vegan alternative)
Instructions
- Prepare your ingredients by measuring out the pumpkin and gathering everything else.
- In a large mixing bowl, whip the heavy cream until thickened, gradually adding sugar until soft peaks form.
- In another bowl, combine pumpkin puree, vanilla, and spices, blending until smooth.
- Gently fold the whipped cream into the pumpkin mixture until well incorporated.
- Dissolve gelatin according to package instructions and fold it into the mixture.
- Spoon the mousse into serving dishes, cover, and refrigerate for at least 240 minutes.
- Top with whipped cream or caramel just before serving, adding gingersnaps or pecans for crunch if desired.
Notes
For a dairy-free version, substitute heavy cream with coconut cream.
