- 8 oz dark chocolate
- 3 large eggs
- 1 cup granulated sugar
- 1 cup heavy cream
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a round cake pan.
- Melt the dark chocolate in a microwave-safe bowl in 30-second intervals until smooth, then let cool slightly.
- In a bowl, whisk together pumpkin puree, eggs, sugar, spices, and vanilla until smooth.
- Gently fold the melted chocolate into the pumpkin mixture.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick comes out clean.
- Let the cake cool completely before transferring to a wire rack.
- Whip the heavy cream to soft peaks and fold into the cooled chocolate-pumpkin mixture.
- Layer the mousse over the cooled cake and chill in the refrigerator for at least two hours.
- Serve topped with chocolate shavings or whipped cream.
