- 2 lbs Beef Chuck, cut into 1-inch chunks
- 1 bottle Red Wine (Merlot or Cabernet Sauvignon)
- 2 Onions, chopped
- 4 cloves Garlic, minced
- 3 Carrots, chopped
- 2 Stalks Celery, chopped
- 2 cups Beef Broth
- 8 oz Button or Cremini Mushrooms, sliced
- 2 tbsp Olive Oil
- 2 Bay Leaves
- 2 tsp Fresh Thyme
- 2 tsp Fresh Rosemary
- Salt and Pepper to taste
Instructions
- Prep your ingredients by chopping vegetables and cutting beef into 1-inch chunks.
- In a large Dutch oven, heat olive oil over medium-high heat and sear the beef in batches until browned. Remove and set aside.
- Add more olive oil if necessary, and sauté onions, garlic, carrots, and celery until softened, about 5-7 minutes.
- Deglaze the pot with red wine, scraping browned bits from the bottom, then add beef broth, mushrooms, bay leaves, and herbs.
- Return the seared beef to the pot, submerging it in liquid. Bring to a boil then reduce to a simmer.
- Allow the stew to simmer for 2.5 to 3 hours until the beef is fork-tender. Stir occasionally.
- Before serving, taste and adjust seasoning with salt and pepper as needed.
Notes
Serve warm in rustic bowls garnished with fresh parsley. Pair with crusty bread and a side salad for balance.
