Description

A comforting and hearty Provençal beef stew enriched with red wine and aromatic herbs, perfect for family gatherings.


Ingredients

  • 2 lbs beef (chuck or brisket), cut into chunks
  • 1 bottle (750ml) dry red wine
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 2 carrots, chopped
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh rosemary, chopped
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Sear the beef: Season beef chunks with salt and pepper. Heat olive oil in a pot and sear the beef on all sides until golden brown. Remove and set aside.
  2. Sauté the aromatics: In the same pot, add onions, carrots, and garlic. Cook until softened, about 5-7 minutes.
  3. Deglaze with wine: Pour in the red wine and scrape the bottom of the pot. Allow to simmer for a few minutes.
  4. Add beef and stock: Return the beef to the pot and stir in tomato paste, broth, bay leaves, and herbs.
  5. Simmer away: Bring to a gentle boil, then reduce heat to low. Cover and simmer for 120-180 minutes.
  6. Final touches: Adjust seasoning to taste and remove bay leaves before serving. Optionally thicken with cornstarch slurry.
  7. Serve with love: Ladle stew into bowls and serve warm, paired with crusty bread or over mashed potatoes.

Notes
