A comforting and hearty Provençal beef stew enriched with red wine and aromatic herbs, perfect for family gatherings.
Ingredients

- 2 lbs beef (chuck or brisket), cut into chunks
- 1 bottle (750ml) dry red wine
- 2 onions, chopped
- 4 cloves garlic, minced
- 2 carrots, chopped
- 4 cups beef broth
- 2 tbsp tomato paste
- 2 bay leaves
- 2 tsp fresh thyme, chopped
- 2 tsp fresh rosemary, chopped
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Sear the beef: Season beef chunks with salt and pepper. Heat olive oil in a pot and sear the beef on all sides until golden brown. Remove and set aside.
- Sauté the aromatics: In the same pot, add onions, carrots, and garlic. Cook until softened, about 5-7 minutes.
- Deglaze with wine: Pour in the red wine and scrape the bottom of the pot. Allow to simmer for a few minutes.
- Add beef and stock: Return the beef to the pot and stir in tomato paste, broth, bay leaves, and herbs.
- Simmer away: Bring to a gentle boil, then reduce heat to low. Cover and simmer for 120-180 minutes.
- Final touches: Adjust seasoning to taste and remove bay leaves before serving. Optionally thicken with cornstarch slurry.
- Serve with love: Ladle stew into bowls and serve warm, paired with crusty bread or over mashed potatoes.

This stew can be customized with additional vegetables or herbs. Serve with a side salad for a complete meal.
