- 4 boneless, skinless chicken breasts or thighs
- 1 cup pretzel crumbs
- 1 cup cherries (fresh or frozen)
- 3 tablespoons honey or maple syrup
- 2 cloves garlic, minced
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Pat chicken dry and season with salt and pepper.
- In a food processor, pulse pretzel crumbs until flour-like, leaving some larger bits intact.
- In a saucepan, combine cherries, honey, garlic, and spices. Simmer for 5-10 minutes until thickened.
- Dip chicken into cherry glaze, then coat with pretzel crumbs.
- Place coated chicken on a baking sheet, drizzled with extra glaze, and bake for 25-30 minutes until cooked through.
- Let rest for a few minutes, serve with more cherry glaze drizzled on top.
