Delicious Pork and Sauerkraut Spring Rolls combine savory pork with tangy sauerkraut and fresh vegetables wrapped in a crispy shell.

- 1 lb ground pork
- 2 cups sauerkraut
- 1 cup carrots, julienned
- 1 cup bell peppers, chopped
- 1/2 cup scallions, sliced
- Spring roll wrappers
- Fresh cilantro or parsley, for garnish
- Oil for frying
- Salt and pepper, to taste
Instructions
- In a skillet over medium heat, cook the ground pork until browned and no longer pink. Drain excess fat.
- Add sauerkraut to the skillet, stirring for about 5 minutes to warm through, then toss in carrots and bell peppers, sautéing until tender.
- Season the mixture with herbs, salt, and pepper to taste.
- Once cooled slightly, lay a spring roll wrapper on a surface with one corner facing you. Place a spoonful of filling near that corner, fold it over and roll tightly, sealing the edges.
- Heat oil in a frying pan and deep-fry the spring rolls until golden brown and crispy or brush with oil and bake at 400°F for about 20 minutes.
- Serve with a dipping sauce made from soy sauce, honey, and vinegar.
Notes
For a vegetarian option, replace pork with sautéed mushrooms or lentils and the sauerkraut with pickled vegetables.
