- Bone-in chicken pieces (thighs or drumsticks)
- 1 cup pomegranate juice (freshly squeezed or store-bought)
- 2 tbsp sumac
- 4 cloves garlic, minced
- 1 sweet onion, sliced
- 3 tbsp olive oil
- Salt, to taste
- Pepper, to taste
- Fresh pomegranate seeds, for garnish
- Fresh herbs (like parsley), for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken pieces dry with paper towels and season generously with salt, pepper, and sumac.
- In a large ovenproof skillet, heat olive oil over medium heat. Add sliced onions and sauté until softened, then add minced garlic.
- Push the onions to the side and sear the chicken pieces skin-side down for 5-7 minutes until browned.
- Add pomegranate juice to the skillet and let it bubble with the browning bits.
- Flip the chicken skin-side up, drizzle additional pomegranate juice, and roast in the oven for 25-30 minutes until fully cooked and crispy.
- Garnish with fresh pomegranate seeds and herbs before serving.
Notes
Allow chicken to come to room temperature before cooking for even results. Baste with pan juices to retain moisture.
