Ingredients

  • Bone-in chicken pieces (thighs or drumsticks)
  • 1 cup pomegranate juice (freshly squeezed or store-bought)
  • 2 tbsp sumac
  • 4 cloves garlic, minced
  • 1 sweet onion, sliced
  • 3 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste
  • Fresh pomegranate seeds, for garnish
  • Fresh herbs (like parsley), for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken pieces dry with paper towels and season generously with salt, pepper, and sumac.
  3. In a large ovenproof skillet, heat olive oil over medium heat. Add sliced onions and sauté until softened, then add minced garlic.
  4. Push the onions to the side and sear the chicken pieces skin-side down for 5-7 minutes until browned.
  5. Add pomegranate juice to the skillet and let it bubble with the browning bits.
  6. Flip the chicken skin-side up, drizzle additional pomegranate juice, and roast in the oven for 25-30 minutes until fully cooked and crispy.
  7. Garnish with fresh pomegranate seeds and herbs before serving.

Notes

Allow chicken to come to room temperature before cooking for even results. Baste with pan juices to retain moisture.
