Instructions
- Marinate the Chicken: In a bowl, combine pomegranate juice, sumac, olive oil, minced garlic, salt, and pepper. Whisk until combined. Place chicken pieces in a zip-top bag or bowl, pour marinade over, ensuring each piece is coated. Marinate for at least 1 hour in the fridge.
- Preheat Your Oven: Preheat to 400°F (200°C).
- Prepare for Roasting: Grease a baking sheet or roasting pan. Arrange marinated chicken in a single layer.
- Roast the Chicken: Roast in the oven for 35 to 45 minutes, or until golden brown and internal temperature reaches 165°F (75°C), basting halfway through.
- Add Pomegranate Seeds: Sprinkle seeds over chicken in the last few minutes of roasting to heat through.
