  • 1 cup pomegranate juice (100% juice)
  • 2 tablespoons sumac
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup pomegranate seeds
  • Fresh herbs (cilantro or parsley)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix pomegranate juice, olive oil, minced garlic, sumac, salt, and pepper in a large bowl.
  3. Add the chicken pieces to the marinade, ensuring they are well coated.
  4. Spread the marinated chicken on a baking tray lined with parchment paper and pour over any leftover marinade.
  5. Roast in the preheated oven for 30-40 minutes or until golden brown and the internal temperature reaches 165°F (75°C).
  6. Sprinkle pomegranate seeds over the chicken 5 minutes before it is done.
