- 1 cup pomegranate juice (100% juice)
- 2 tablespoons sumac
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup pomegranate seeds
- Fresh herbs (cilantro or parsley)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Mix pomegranate juice, olive oil, minced garlic, sumac, salt, and pepper in a large bowl.
- Add the chicken pieces to the marinade, ensuring they are well coated.
- Spread the marinated chicken on a baking tray lined with parchment paper and pour over any leftover marinade.
- Roast in the preheated oven for 30-40 minutes or until golden brown and the internal temperature reaches 165°F (75°C).
- Sprinkle pomegranate seeds over the chicken 5 minutes before it is done.
- Rest the chicken for 5-10 minutes before serving, garnished with fresh herbs.
