Ingredients

- 4 medium potatoes (Russet preferred)
- 1 large yellow onion
- 1/4 cup fresh dill, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 2 tablespoons butter
- 1/2 cup heavy cream (optional)
- Salt and black pepper to taste
- Optional veggies: carrots or zucchini
Instructions
- Prep the Ingredients: Peel and dice the potatoes; chop the onions and garlic; rinse and chop the dill.
- Sauté Aromatics: In a large pot, melt the butter over medium heat, then sauté the onions until translucent, about 5–7 minutes. Add the garlic and cook for an additional minute.
- Cook the Potatoes: Add the diced potatoes, coating them with the butter and aromatics; cook for another 3–4 minutes.
- Add the Broth: Pour in the broth, bring to a simmer, and cook for about 15 minutes or until the potatoes are tender.
- Incorporate Dill: Add the chopped dill and stir; optionally add 1/2 cup of heavy cream for richness.
- Blend, if Desired: Use a blender to puree part of the soup for creaminess, then stir it back in.
- Season: Taste and season with salt and pepper as needed.
- Serve: Dish in bowls and garnish with extra dill and a swirl of cream if desired.
Notes
Serve with crusty bread or a side salad to complete the meal.
