  • 8 flour or corn tortillas
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped (optional)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil and sauté onions and garlic until fragrant, about 3-4 minutes.
  3. Add ground beef, seasoning with chili powder, cumin, and oregano; cook until browned.
  4. Stir in marinara sauce and simmer for 5 minutes.
  5. Take a tortilla, fill it with beef mixture and cheese, and roll it up. Place seam-side down in a greased baking dish.
  6. Repeat with all tortillas, then top with remaining marinara sauce and cheese.
  7. Cover with foil and bake for 25 minutes; remove foil and bake an additional 10 minutes until cheese is bubbly.
  8. Cool slightly before serving, garnishing with fresh herbs if desired.
