- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 2 ½ tsp baking powder
- ½ tsp salt
- 1 cup pistachios, roasted and unsalted
- ½ cup unsalted butter, softened
- 4 large eggs
- 1 cup whole milk
- 1 cup mascarpone cheese
- 1 ½ cups powdered sugar
- 2 tsp vanilla extract
- 1 tsp almond extract (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease three 8-inch round cake pans.
- Grind 1 cup of pistachios in a food processor until fine and set aside.
- In a bowl, whisk together flour, baking powder, ground pistachios, and salt.
- In another bowl, cream the butter and sugar until light and fluffy, about 3-4 minutes.
- Add eggs one at a time, mixing well, then add milk and vanilla extract.
- Gradually mix in the dry ingredients until just combined.
- Divide the batter among the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
- For the frosting, beat mascarpone with powdered sugar and vanilla until smooth.
- Once cooled, layer the cake with mascarpone frosting and crushed pistachios, topping with remaining frosting.
- Garnish with crushed pistachios and serve.
Notes
For a richer flavor, consider using almond extract in the batter and serving with fresh berries.
