Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Incorporate the vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and sea salt. Gradually mix this into the wet ingredients until just combined.
  5. Gently fold in the chopped pistachios and dried cranberries into the dough.
  6. Take portions of the dough and shape them into wreath-like circles with a hole in the center.
  7. Arrange the wreaths on a parchment-lined baking sheet and bake for about 10-12 minutes or until the edges are slightly golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
