Description
Delightful holiday cookies combining the nutty richness of pistachios with the tart sweetness of cranberries, shaped like festive wreaths.
Ingredients
Scale
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1 teaspoon vanilla extract
- 1 cup roasted pistachios, roughly chopped
- 1 cup dried cranberries
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Incorporate the vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, and sea salt. Gradually mix this into the wet ingredients until just combined.
- Gently fold in the chopped pistachios and dried cranberries into the dough.
- Take portions of the dough and shape them into wreath-like circles with a hole in the center.
- Arrange the wreaths on a parchment-lined baking sheet and bake for about 10-12 minutes or until the edges are slightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Chill the dough for at least 30 minutes before baking to prevent spreading. Avoid overbaking for a perfectly chewy texture.
