- 2 3/4 cups all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon

- 1/4 teaspoon ground cloves
- 1 teaspoon baking soda
- 1 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 cup molasses
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups cream cheese frosting
Instructions
- In a large mixing bowl, blend the softened butter and sugars until fluffy.
- Mix in the molasses and eggs, ensuring everything is well-combined.
- In a separate bowl, whisk together the flour, baking soda, and spices. Gradually add to the butter mixture, blending until you have a smooth dough.
- Wrap the dough in plastic wrap and refrigerate for at least one hour.
- Once chilled, roll the dough on a floured surface to about 1/4 inch thick. Use a cookie cutter to create your desired shapes.
- Place the cookies on a parchment-lined baking sheet and bake in a preheated oven at 350°F (175°C) for about 10-12 minutes or until edges are firm but still soft in the center.
- Allow your cookies to cool on a wire rack before frosting.
- Prepare your cream cheese frosting by beating together cream cheese, butter, powdered sugar, and vanilla until smooth. Spread frosting on the flat side of one cookie and sandwich another on top.
Notes
For a chewy center, pull the cookies out when they look barely done; they’ll firm up as they cool. Avoid overbaking to keep them moist.
